Food sustainability in the face of global challenges

The International Conference on Culinary Arts and Sciences (ICCAS) was founded in 1993 by the Worshipful Company of Cooks of London as a forum for culinary artists and scientists from academia and industry to present their work and share ideas. ICCAS is the only international conference that brings together foodservice and food industry professionals with scientists from multiple academic perspectives.     

Since the first ICCAS conference held at Bournemouth University in the United Kingdom in 1996, thirteen ICCAS conferences have taken place around the world, with the most recent in Kristianstad, Sweden in 2024. 

The 14th edition of ICCAS conference will take place in June 2026 in Quebec, Canada. Co-organized by the Centre NUTRISS and the GastronomiQc Lab, it will be held on the campus of Université Laval in Quebec City. Founded in 1608, Quebec City is one of North America's oldest cities, offering a unique blend of history and modernity with its combination of centuries-old architecture and modern buildings as well as iconic landmarks like the Château Frontenac.

The conference seeks to offer an opportunity for researchers to share their work with the international scientific community and food system actors interested in culinary arts, food science and consumer sciences.
